Ingredients

2 lbs lamb, cut into one inch cubes
1 cup olive oil
12 cup lemon juice
2 garlic cloves, minced finely
2 tablespoons salt
1 tablespoon pepper
6 bay leaves
2 small eggplants, cubed
1 onion, cubed
2 green peppers, cubed
4 small tomatoes, cubed

Instructions

1. In a bowl, combine bay leaves, salt, pepper, olive oil, lemon juice, and finely minced garlic. Marinate the lamb cubes for four hours in the refrigerator.
2. Remove the lamb from the marinade and skewer them with bay leaves, cubed eggplants, onions, green peppers, and tomatoes. Brush the skewers with the remaining marinade.
3. Grill the skewers for 5-8 minutes on each side or broil them in the oven for 3-5 minutes on each side until cooked through.
4. Allow the kebabs to cool for 5 minutes to allow the juices to set before serving.
