Persian Lamb Kebabs

A savory and zesty Persian dish featuring marinated lamb skewers with vegetables.
Ingredients
2 | lbs lamb, cut into one inch cubes |

1 | cup olive oil |
1⁄2 | cup lemon juice |
2 | garlic cloves, minced finely |
2 | tablespoons salt |
1 | tablespoon pepper |
6 | bay leaves |
2 | small eggplants, cubed |
1 | onion, cubed |
2 | green peppers, cubed |
4 | small tomatoes, cubed |
Instructions

- In a bowl, combine bay leaves, salt, pepper, olive oil, lemon juice, and finely minced garlic. Marinate the lamb cubes for four hours in the refrigerator.
- Remove the lamb from the marinade and skewer them with bay leaves, cubed eggplants, onions, green peppers, and tomatoes. Brush the skewers with the remaining marinade.
- Grill the skewers for 5-8 minutes on each side or broil them in the oven for 3-5 minutes on each side until cooked through.
- Allow the kebabs to cool for 5 minutes to allow the juices to set before serving.
