2 vital wheat gluten (Bob's Red Mill)
2 tablespoons spelt flour
14 cup nutritional yeast
1 12 cold water
12 cup tamari (I used Bragg's Amino Acids) or soy sauce (I used Bragg's)
1 tablespoon ketchup (or tomato paste)
1 tablespoon olive oil
2 finely chopped garlic cloves
1 teaspoon lemon zest

    1. Prepare the dry ingredients by combining vital wheat gluten, spelt flour, and nutritional yeast in the bowl of a stand mixer.
    2. Using the paddle attachment on the mixer, slowly combine the dry ingredients to ensure even distribution.
    3. In a separate bowl, whisk together cold water, tamari (or soy sauce), ketchup (or tomato paste), olive oil, finely chopped garlic cloves, and lemon zest.
    4. Gradually add the wet ingredients to the dry mixture in the stand mixer, blending slowly to incorporate the liquids.
    5. Adjust the consistency by adding additional spelt flour if the mixture is too wet. Mix the dough for 5 minutes to develop the gluten.
    6. Shape the dough into a loaf and let it rest while bringing a pot of water to a simmer. Cut the loaf into 6 pieces and gently simmer them in the broth for 1 hour.
    7. After simmering, remove the seitan and allow it to cool completely before use. It can be stored in the broth for up to 5 days or frozen for future use.
