cup fresh lemon juice or lime juice
1-2 lemon zest
5 tablespoons sugar
1 egg, room temperature
½ teaspoon vanilla extract

Instructions

1. In a small saucepan set over medium heat, dissolve sugar into fresh lemon juice. Gently mix in the lemon zest.
2. In a small or medium-sized bowl, lightly beat the egg. While whisking constantly, slowly pour the lemon sugar syrup into the egg. Beat for 2 minutes (only 1 minute if using a mixer), then transfer the mixture back into the saucepan.
3. Heat the mixture over low heat, stirring constantly, until it begins to bubble at the edges. Remove from heat and stir in the vanilla extract.
4. Transfer the curd to a small container and store it in the refrigerator.
