16 ounces tilapia fillets
1 lemon, juice of
1/4 cup chopped fresh parsley
4 tablespoons butter, divided
2 tablespoons olive oil
1/4-1/2 cup flour, for dusting fish

Instructions

    1. Chop the fresh parsley and set aside. Juice the lemon and set aside.
    2. In a non-stick skillet, melt 2 tablespoons of butter and the olive oil over medium heat.
    3. Lightly dust the tilapia fillets in flour, and season with salt and pepper as desired.
    4. Once the butter stops bubbling, add the fish fillets and sauté for 3-4 minutes on the first side.
