- Begin by boiling 2-3 split chicken breasts in low-sodium chicken broth and water.
- While the chicken is cooking, prepare a large area of wax paper for later use.
- In a mixing bowl, sift 3 cups of self-rising flour.
- Slowly add 1 - 1/2 cups of ice water to the flour to form a dough ball. Use any excess flour to coat the prepared wax paper.
- Roll out the dough to your desired thickness using a rolling pin. Thin dumplings are preferred, but you can adjust to your liking.
- Cut the rolled out dough into small or medium squares using a knife or pizza cutter.
- Once the chicken is cooked, remove the meat from the bone and shred it.
- Bring the broth to a boil and carefully add the dumplings and shredded chicken. Make sure not to add all the dumplings at once to prevent sticking.
- Season the dumplings with salt and pepper to taste. Omit salt if the chicken broth is already salty, but a generous amount of pepper enhances the flavor.
- While the dumplings are cooking, prepare long-grain white rice using low-sodium chicken broth for added flavor.
- Serve the chicken and dumplings hot with a side of white rice for a comforting meal.
