Ingredients

8 ounces lean boneless skinless chicken breasts, cut into 10 nugget-shaped pieces
14 cup Fiber One cereal, ground to a breadcrumb-like consistency (original)
1 ounce Pringles fat free barbecue potato crisps (or another fat-free BBQ-flavored potato chip)
3 tablespoons Frank's RedHot original cayenne pepper sauce
1 dash onion powder
1 dash garlic powder
1 dash cayenne pepper
1 dash black pepper
1 dash salt

Instructions

  • For the chicken bites

    1. Preheat the oven to 375°F (190°C).
    2. Crush the potato crisps completely and mix with ground cereal crumbs, onion powder, garlic powder, cayenne pepper, black pepper, and salt.
    3. In a separate dish, toss chicken pieces with Frank's RedHot sauce. Then coat each chicken piece evenly with the crumb mixture.
    4. Place the coated chicken nuggets on a sprayed baking pan. Bake for 10 minutes, then flip the nuggets and bake for an additional 10 minutes, until the outsides are crispy and the chicken is cooked throughout.
