FILLING

Instructions

1. Preheat the oven to 350°F (180°C) and grease an 8-inch springform pan.
2. To make the crust blend the butter, sugar, egg, flour, and melted butter. Chill the dough for an hour, then roll it out, bake at 350°F (180°C) for 15 minutes. (You can avoid this step by using your store bought crackers)
3. Blend the crust with the butter in a food processor, press onto the pan, and refrigerate while preparing the filling.
4. For the filling, beat cream cheese, sugar, sour cream, orange zest, and juice until smooth. Add eggs one at a time and mix well.
5. Pour the filling over the crust, tap the pan to release air bubbles, and place in a water bath in the oven.
6. Bake for an hour until edges are set but center is slightly wobbly. Turn off the oven, leave the cheesecake to cool for an hour.
7. Chill the cheesecake for at least 4 hours, ideally overnight, before serving.
8. Refrigerate the cheesecake until ready to serve. Enjoy!
