Ingredients
| 2 | cups graham crackers, crushed for crust |

| 1⁄3 | cup butter | 
| 1⁄3 | cup sugar | 
| 1 | egg for crust | 
| 2 | cups flour for crust | 
| 1⁄3 | cup unsalted butter, melted for crust | 
| FILLING | |
| 2 1⁄2 | cups cream cheese | 
| 1⁄3 | cup granulated sugar (adjust to taste) | 
| • | cup sour cream (or heavy cream) | 
| 2 | eggs | 
| 2 | teaspoons vanilla extract (optional) | 
| 1 | tablespoons orange juice (or lemon juice for lighter taste) | 
| • | orange zest from 1 orange (optional) | 
Instructions
| 1. | Preheat the oven to 350°F (180°C) and grease an 8-inch springform pan. |

| 2. | To make the crust blend the butter, sugar, egg, flour, and melted butter. Chill the dough for an hour, then roll it out, bake at 350°F (180°C) for 15 minutes. (You can avoid this step by using your store bought crackers) | 
| 3. | Blend the crust with the butter in a food processor, press onto the pan, and refrigerate while preparing the filling. | 
| 4. | For the filling, beat cream cheese, sugar, sour cream, orange zest, and juice until smooth. Add eggs one at a time and mix well. | 
| 5. | Pour the filling over the crust, tap the pan to release air bubbles, and place in a water bath in the oven. | 
| 6. | Bake for an hour until edges are set but center is slightly wobbly. Turn off the oven, leave the cheesecake to cool for an hour. | 
| 7. | Chill the cheesecake for at least 4 hours, ideally overnight, before serving. | 
| 8. | Refrigerate the cheesecake until ready to serve. Enjoy! |
