Ingredients

4 cups whole milk
1 tablespoon ground cinnamon
2 teaspoons vanilla extract
1 teaspoon ground cloves
12 large egg yolks
1 cup cane sugar
1 pint whipping cream

Instructions

1. In a medium pot over medium-high heat, combine 4 cups of whole milk, ground cinnamon, vanilla extract, and ground cloves. Stir occasionally for 3 to 5 minutes until the spices infuse into the milk, ensuring to scrape the bottom to prevent burning.
2. In a large mixing bowl, whisk together 12 egg yolks and 1 cup of cane sugar until the mixture is pale yellow, thick, and smooth.
3. Remove the milk mixture from the heat. Gradually add some of the hot milk to the egg yolk mixture while whisking vigorously to prevent curdling. Continue this process until all the milk is incorporated.
4. Return the mixture to the pot and cook over medium heat, stirring constantly with a spatula until the eggnog thickens and turns a light beige color, approximately 5 minutes. The mixture should coat the back of the spatula. Remove from heat.
5. In a pitcher, combine whipping cream and ground nutmeg. Pour the eggnog mixture into the cream and gently mix with a spatula. Refrigerate for 8 hours to overnight for optimal flavor development. Remember to stir before serving.
