Ingredients

2 large sweet onions (i.e. Vidalia, Mayan, etc.), sliced into rings
2 cups all-purpose flour
1 ½ cups chicken stock or vegetable stock
1 tablespoon salt (optional)
2 teaspoons paprika
¼ teaspoon cayenne pepper
dried ancho peppers, flaked (or use your favorite chili pepper)
vegetable oil for frying

Instructions

1. Begin by cutting the sweet onions into 1/4-inch slices, then separate into concentric rings. Set aside.
2. In a mixing bowl, combine all-purpose flour, salt (if desired), paprika, cayenne pepper, and flaked dried ancho peppers.
3. Gradually add chicken or vegetable stock to the dry ingredients, adjusting until a thick batter consistency is achieved.
4. In a heavy saucepan, wok, or deep fryer, pour enough vegetable oil to reach a depth of 2 to 3 inches. Heat the oil to 350F.
5. Using tongs, coat each onion ring individually with the batter until fully covered.
6. Fry the coated onion rings in batches, cooking until they reach various shades of medium and dark brown.
7. Once fried, transfer the onion rings to paper towels to blot and absorb any excess oil.
8. * Note: Start with 1 1/2 cups of stock and adjust by adding flour and stock alternately until the desired batter texture is achieved.
