2 | large sweet onions (i.e. Vidalia, Mayan, etc.), sliced into rings |

2 | cups all-purpose flour |
1 ½ | cups chicken stock or vegetable stock |
1 | tablespoon salt (optional) |
2 | teaspoons paprika |
¼ | teaspoon cayenne pepper |
dried ancho peppers, flaked (or use your favorite chili pepper) | |
vegetable oil for frying |
Instructions

- Begin by cutting the sweet onions into 1/4-inch slices, then separate into concentric rings. Set aside.
- In a mixing bowl, combine all-purpose flour, salt (if desired), paprika, cayenne pepper, and flaked dried ancho peppers.
- Gradually add chicken or vegetable stock to the dry ingredients, adjusting until a thick batter consistency is achieved.
- In a heavy saucepan, wok, or deep fryer, pour enough vegetable oil to reach a depth of 2 to 3 inches. Heat the oil to 350F.
- Using tongs, coat each onion ring individually with the batter until fully covered.
- Fry the coated onion rings in batches, cooking until they reach various shades of medium and dark brown.
- Once fried, transfer the onion rings to paper towels to blot and absorb any excess oil.
- * Note: Start with 1 1/2 cups of stock and adjust by adding flour and stock alternately until the desired batter texture is achieved.
