2 | large sweet onions (i.e. Vidalia, Mayan, etc.), sliced into rings |

1 1⁄2 | cups chicken stock or vegetable stock |
1 | tablespoon salt (optional) |
2 | teaspoons paprika |
1⁄4 | teaspoon cayenne pepper |
| • | dried ancho peppers, flaked (or use your favorite chili pepper) |
| • | vegetable oil for frying |
Instructions
| 1. | Begin by cutting the sweet onions into 1/4-inch slices, then separate into concentric rings. Set aside. |

| 2. | In a mixing bowl, combine all-purpose flour, salt (if desired), paprika, cayenne pepper, and flaked dried ancho peppers. |
| 3. | Gradually add chicken or vegetable stock to the dry ingredients, adjusting until a thick batter consistency is achieved. |
| 4. | In a heavy saucepan, wok, or deep fryer, pour enough vegetable oil to reach a depth of 2 to 3 inches. Heat the oil to 350F. |
| 5. | Using tongs, coat each onion ring individually with the batter until fully covered. |
| 6. | Fry the coated onion rings in batches, cooking until they reach various shades of medium and dark brown. |
