1 red onion, finely chopped
3 tablespoons butter
1 garlic clove, finely chopped
¼ cup honey
1 lime, juice of
1 tablespoon soy sauce
chili pepper flakes, to the taste
1 ½ lbs raw shrimp, shelled (with or without tail)
1 tablespoon sesame seeds
2 teaspoons fresh chives, finely chopped
salt and pepper

1. Heat a frying pan over medium heat and brown the finely chopped red onion in butter. Add in the finely chopped garlic, honey, lime juice, soy sauce, and chili pepper flakes. Allow the mixture to reduce until caramelized. Transfer half of this mixture to a bowl.
2. In the same frying pan, add half of the raw shrimp and sprinkle with sesame seeds. Season with salt and pepper. Cook for 2 minutes over high heat without stirring.
3. After 2 minutes, stir the shrimp and continue cooking for another 1 to 2 minutes over high heat. Add in the finely chopped fresh chives. Set aside in a warm place to keep the shrimp hot.
4. Clean the frying pan and heat the remaining half of the onion mixture over high heat. Add the remaining raw shrimp and follow the same cooking steps as before.
5. Taste and adjust the seasoning if needed. Serve the honey glazed shrimp with sesame seeds over a bed of rice.
