3 | tablespoons mayonnaise (I used soynaise) |
1 | tablespoon lemon juice |
1 | tablespoon water |
2 | teaspoons sugar (I used splenda) |
1 | dash salt to taste (optional) |
⅛ | teaspoon pepper to taste (optional) |
1 | dash cayenne pepper to taste (optional) |

Preparation and Mixing
- Peel the jicama and cut into bite-sized chunks.
- Wash the apple, core it, and cut into bite-sized chunks.
- Wash the carrot, peel if necessary, and cut into bite-sized chunks.
- Combine the jicama, apple, and carrot in a food processor. Pulse the ingredients 3-5 times until the desired texture is achieved.
- Transfer the mixture to a bowl and set it aside.
- In a separate bowl, mix the mayonnaise, lemon juice, water, sugar, salt, pepper, and cayenne pepper until the dressing is smooth.
