Ingredients

1 lb jicama, peeled and cut into bite-sized chunks
1 large granny smith apple, cored and cut into bite-sized chunks
1 carrot, peeled (if needed) and cut into bite-sized chunks
3 tablespoons mayonnaise (I used soynaise)
1 tablespoon lemon juice
1 tablespoon water
2 teaspoons sugar (I used splenda)
1 dash salt to taste (optional)
teaspoon pepper to taste (optional)
1 dash cayenne pepper to taste (optional)

Instructions

  • Preparation and Mixing

    1. Peel the jicama and cut into bite-sized chunks.
    2. Wash the apple, core it, and cut into bite-sized chunks.
    3. Wash the carrot, peel if necessary, and cut into bite-sized chunks.
    4. Combine the jicama, apple, and carrot in a food processor. Pulse the ingredients 3-5 times until the desired texture is achieved.
    5. Transfer the mixture to a bowl and set it aside.
    6. In a separate bowl, mix the mayonnaise, lemon juice, water, sugar, salt, pepper, and cayenne pepper until the dressing is smooth.
    7. Taste the dressing for desired seasoning and adjust if needed.
    8. Pour the dressing over the vegetable mixture and toss until well combined.
    9. Serve the salad immediately or refrigerate to allow the flavors to meld.
