Decadent Caramel Apple Jam

Ingredients
3 ½ | tart apples, cored and sliced |

½ | cup water |
1 | tablespoon lemon juice |
3 | tablespoons brandy (optional) |

Instructions
1. | In a large pan, cook the apples over low heat, covered, until they are soft, for approximately 20 minutes. Feel free to add a splash of water or apple cider if needed to prevent scorching. |

2. | Puree the cooked apples by passing them through the medium screen of a food mill or pressing them through a sieve. |
3. | In a large pan, combine 2 cups of sugar, water, and lemon juice. Without stirring or shaking the pan, bring the syrup to a boil and gently boil until the water evaporates and the syrup transforms into a golden brown hue. Remove the pan from the heat promptly, before the caramel darkens beyond your desired level. |
4. | Add the apple puree to the caramel, which initially hardens before dissolving. Incorporate the remaining 1 1/2 cups of sugar and stir over low heat until the sugar and caramel completely dissolve. Increase the heat to medium-high and bring the jam to a boil. Let it boil, stirring frequently, for 8 to 10 minutes until the jam thickens enough that your spoon briefly leaves a clear trail at the bottom of the pan. |
5. | Remove the pan from the heat. Introduce the brandy, if preferred, and the vanilla extract. Transfer the jam into pint or half-pint jars and process them in a boiling water bath for 10 minutes. |
