Decadent Mint Chocolate Chip Cookies

1 | teaspoon fine ground sea salt |
1 | teaspoon baking soda |
10 | ounces creme de menthe baking chips (Andes brand) |
Instructions
For the cookies | |

1. | Preheat the oven to 375°F (190°C). |
2. | Prepare 3 cookie sheets by lining them with parchment paper for easy cleanup; set aside. |
3. | In a large bowl or mixer, cream together the butter flavor shortening, brown sugar, and white sugar. |
4. | Add the eggs one at a time, mixing well after each addition. |
5. | Mix in the vanilla until well combined. |
6. | In a separate bowl, sift together the all-purpose flour, bread flour or additional all-purpose flour, salt, and baking soda. Add this mixture to the creamed ingredients and mix until fully incorporated. |
7. | Stir in the creme de menthe baking chips. |
8. | Using a 1-1/2 inch cookie scoop or a tablespoon, drop the cookie dough onto the prepared parchment-lined sheets. |
9. | Bake at 375°F (190°C) for 11 minutes. |
10. | Allow the cookies to cool on the sheets for about 2 minutes, then transfer them to wire racks to cool completely. |
11. | Store the cookies in an airtight container. |
