Ingredients

For the Spumoni

1 12 quarts vanilla ice cream
10 dried apricots, chopped
3 tablespoons apricot jam
1 almond biscotti, crushed
2 dark chocolate, chopped
2 tablespoons chocolate syrup
1 tablespoon amaretto liqueur
14 cup almonds, toasted and chopped
1 teaspoon almond extract

Instructions

  • For the Spumoni

    1. Use a sharp knife to divide the vanilla ice cream into three equal portions. Place each portion in a large mixing bowl to allow it to slightly soften.
    2. Line a loaf pan with parchment paper or plastic wrap.
    3. Combine the chopped dried apricots, apricot jam, and crushed almond biscotti with one portion of the vanilla ice cream. Press this mixture into the bottom of the loaf pan. Place the pan in the freezer while preparing the next layer.
    4. Mix the chopped dark chocolate, chocolate syrup, and amaretto liqueur with another portion of the vanilla ice cream. Carefully spread this layer over the first in the loaf pan. Return the pan to the freezer while you work on the final layer.
    5. Combine the toasted and chopped almonds with the remaining portion of vanilla ice cream. Gently spread this final layer over the top of the loaf pan.
    6. Allow the spumoni to freeze in the loaf pan for a minimum of two hours.
    7. Before serving, remove the spumoni from the loaf pan and slice into portions. Garnish each slice with a dollop of whipped cream and a dusting of cocoa powder.
