Ingredients

For Celeriac Stew

500 grams cherry tomatoes
1 tablespoon balsamic vinegar
4 garlic cloves
1 teaspoon dried thyme
12 tablespoon sugar
salt and freshly ground pepper
1 big celeriac, peeled and cubed
1 ounce can of chickpeas, drained and rinsed
1 chilli
2 onions, diced small
2 garlic cloves, chopped
olive oil
1 teaspoon harissa
1 teaspoon mild paprika
12 teaspoon smoked paprika
12 teaspoon turmeric
1 teaspoon thyme
salt and freshly ground pepper
sage leaves (optional)

Instructions

For Roasted Tomatoes

1. Preheat the oven to 160°C (320°F). Grease a baking dish with olive oil and arrange the cherry tomatoes in it.
2. In a small bowl, mix olive oil, balsamic vinegar, sugar, salt, garlic, and thyme. Drizzle the mixture over the tomatoes, ensuring they are well coated.
3. Roast the tomatoes in the oven for about one hour, or until they are tender. Remove from the oven and set aside.

For Celeriac Chickpeas Stew

1. In a Dutch oven or cast iron pan over medium heat, add a splash of olive oil. Sauté half of the diced onions until they sweat.
2. Add harissa, mild paprika, and smoked paprika. Fry for half a minute until aromatic. Add the cubed celeriac and season generously with salt.
3. Cover, and let it cook on low-medium heat for 20 minutes, stirring occasionally. Meanwhile, blend the remaining onion, garlic, chili, and olive oil into a pulp.
4. Once the celeriac is tender, add the chickpeas and the prepared pulp. Mix well, cover, and cook for another 10 minutes, stirring occasionally.

To Assemble the Dish

1. Place a portion of the celeriac chickpea stew on a plate. Arrange the slow-roasted tomatoes on top. Drizzle some of the tomato juices/sauce over the dish. Season with salt and pepper to taste.
