1 | big celeriac, peeled and cubed |
1 | ounce can of chickpeas, drained and rinsed |
1 | chilli |
2 | onions, diced small |
2 | garlic cloves, chopped |

1 | teaspoon mild paprika |
1⁄2 | teaspoon smoked paprika |
1⁄2 | teaspoon turmeric |

Instructions

For Roasted Tomatoes
- Preheat the oven to 160°C (320°F). Grease a baking dish with olive oil and arrange the cherry tomatoes in it.
- In a small bowl, mix olive oil, balsamic vinegar, sugar, salt, garlic, and thyme. Drizzle the mixture over the tomatoes, ensuring they are well coated.
- Roast the tomatoes in the oven for about one hour, or until they are tender. Remove from the oven and set aside.

For Celeriac Chickpeas Stew
- In a Dutch oven or cast iron pan over medium heat, add a splash of olive oil. Sauté half of the diced onions until they sweat.
- Add harissa, mild paprika, and smoked paprika. Fry for half a minute until aromatic. Add the cubed celeriac and season generously with salt.
- Cover, and let it cook on low-medium heat for 20 minutes, stirring occasionally. Meanwhile, blend the remaining onion, garlic, chili, and olive oil into a pulp.
- Once the celeriac is tender, add the chickpeas and the prepared pulp. Mix well, cover, and cook for another 10 minutes, stirring occasionally.

To Assemble the Dish
- Place a portion of the celeriac chickpea stew on a plate. Arrange the slow-roasted tomatoes on top. Drizzle some of the tomato juices/sauce over the dish. Season with salt and pepper to taste.
