Spiced Curry Biscuits

Ingredients
3 | sticks unsalted butter at room temperature |

⅔ | cup sugar |
3 | cups flour |
2 ¼ | teaspoons Kala brand West Indian curry powder |
1 ½ | teaspoons sweet paprika |
½ | teaspoon chili powder |
1 ½ | teaspoons turmeric |
¼ | teaspoon cayenne |
1 | teaspoon sea salt |
¼ | teaspoon freshly ground black pepper |
Instructions
1. | Preheat the oven to 350F. |

2. | In a Kitchenaid mixer, cream the room temperature unsalted butter and sugar until light and fluffy, for about 5 minutes. Remember to scrape down the sides occasionally with a rubber spatula. |
3. | In a separate bowl, sift together the flour, Kala brand West Indian curry powder, sweet paprika, chili powder, turmeric, cayenne, sea salt, and freshly ground black pepper. |
4. | Gradually add the dry ingredients to the butter mixture, and beat until well blended. Make sure to scrape down the sides of the bowl as needed. |
5. | Divide the dough in half and roll each portion between two sheets of waxed paper until it is about 3/16 inch thick. Refrigerate the dough for at least 30 minutes, up to 3 days. The dough can also be wrapped well and frozen at this stage. If frozen, ensure to defrost it in the refrigerator before proceeding. |
6. | Once chilled, roll the dough into logs with a diameter of 1 to 1 1/4 inches. Chill the logs until firm enough to slice, then cut into slices that are 1/8 to 3/16 inch thick. Place the slices on a parchment-lined baking sheet and bake until slightly colored, approximately 10-12 minutes. Once baked, cool the biscuits on a wire rack. Store the biscuits in an airtight container for up to a week, or freeze them for much longer freshness. |
