700 | g demerara sugar |

800 | ml red wine vinegar |

Instructions
For Perfecting the Chutney | |

1. | Combine all the ingredients in a large saucepan. Bring to a gentle boil, then reduce the heat and simmer covered for 30 minutes. |
2. | Uncover the pan and continue to simmer for approximately an hour and a half, stirring frequently until the chutney is beautifully reduced, thick, and bursting with flavor. If the chutney thickens too much, add a splash of water. Taste and adjust the seasoning, adding brown sugar, vinegar, or chili flakes as needed. On certain occasions, depending on fig moisture, the chutney may need over 2 hours to reach the desired consistency. |
3. | Carefully spoon the chutney into sterilized jars and seal. This flavorful creation can be stored for up to 8 or 9 months in a cool, dark place if unopened. Once opened, store in the refrigerator and consume within 4 weeks. |
