Elevate your palate with this exquisite fresh fig and ginger chutney, a delightful combination of sweet and spicy flavors. Perfectly simmered to a luxurious thickness, this chutney promises to add a burst of rich flavor to any dish.

Ingredients

For the Flavorful Chutney

850 g fresh figs, chopped
400 g dried figs, chopped
3 large red onions, finely chopped
3 medium bramley apples
40 g fresh gingerroot, cut into fine matchsticks
2 teaspoons ground allspice
1 pinch dried chili pepper flakes
2 teaspoons finely grated lemon zest
700 g demerara sugar
2 teaspoons salt
800 ml red wine vinegar
2 teaspoons fresh ground black pepper

Instructions

  • For Perfecting the Chutney

    1. Combine all the ingredients in a large saucepan. Bring to a gentle boil, then reduce the heat and simmer covered for 30 minutes.
    2. Uncover the pan and continue to simmer for approximately an hour and a half, stirring frequently until the chutney is beautifully reduced, thick, and bursting with flavor. If the chutney thickens too much, add a splash of water. Taste and adjust the seasoning, adding brown sugar, vinegar, or chili flakes as needed. On certain occasions, depending on fig moisture, the chutney may need over 2 hours to reach the desired consistency.
    3. Carefully spoon the chutney into sterilized jars and seal. This flavorful creation can be stored for up to 8 or 9 months in a cool, dark place if unopened. Once opened, store in the refrigerator and consume within 4 weeks.
