Ingredients

2 tablespoons olive oil
1 ½ red onions (sliced)
2 small apples, diced into 5ml cubes
5 g fresh ginger, peeled and finely chopped
1 garlic clove, crushed and finely chopped
150 ml cranberry juice
4 tablespoons light brown sugar

Instructions

1. In a large saucepan or saute pan, heat olive oil over low heat. Add the garlic and ginger, and saute for a few minutes, being careful not to brown the garlic.
2. Stir in the sliced red onions, diced apples, fresh ginger, garlic, cranberry juice, and light brown sugar. Mix well and bring the mixture to a gentle boil.
3. Reduce the heat to low and simmer the chutney for approximately 30-40 minutes, or until it thickens to a sticky consistency.
4. Once cooked, transfer the chutney to a sterilized lidded jar and allow it to cool before refrigerating.
5. Enjoy this savory red onion chutney in salads and sandwiches. It complements a cheese salad sandwich on wholemeal or seeded bread beautifully.
6. This recipe yields enough chutney to fill a large lidded glass jar or sealable container.
