Savory Red Onion Chutney
A flavorful and versatile chutney that pairs perfectly with salads and sandwiches.
Ingredients
2 | tablespoons olive oil |

1 ½ | red onions (sliced) |
2 | small apples, diced into 5ml cubes |
5 | g fresh ginger, peeled and finely chopped |
1 | garlic clove, crushed and finely chopped |
150 | ml cranberry juice |
4 | tablespoons light brown sugar |
Instructions
1. | In a large saucepan or saute pan, heat olive oil over low heat. Add the garlic and ginger, and saute for a few minutes, being careful not to brown the garlic. |

2. | Stir in the sliced red onions, diced apples, fresh ginger, garlic, cranberry juice, and light brown sugar. Mix well and bring the mixture to a gentle boil. |
3. | Reduce the heat to low and simmer the chutney for approximately 30-40 minutes, or until it thickens to a sticky consistency. |
4. | Once cooked, transfer the chutney to a sterilized lidded jar and allow it to cool before refrigerating. |
5. | Enjoy this savory red onion chutney in salads and sandwiches. It complements a cheese salad sandwich on wholemeal or seeded bread beautifully. |
