3 (14 ounce) cans vegetable broth
12 cups Swiss chard, chopped (about 1 bunch)
1 lb red lentil (or 2 ¼ cups)
1 (15 ounce) can garbanzo beans, drained (chickpeas)
yogurt (garnish) or sour cream (garnish)

    1. Heat olive oil in a large soup pot or saucepan over medium-high heat. Saute the sliced onion for 10-15 minutes, or until golden.
    2. Add the curry powder and cayenne pepper, stirring to incorporate the flavors.
    3. Pour in the vegetable broth and chopped Swiss chard. Increase the heat to high and bring the mixture to a boil.
    4. Reduce the heat to medium, then stir in the red lentils and garbanzo beans. Cover the pan and simmer for 10 minutes, or until the lentils are tender. Note: Brown lentils may require additional cooking time.
