Instructions

For steamed spinach
- Preheat a large pan with a steamer insert over high heat, adding 1" of water and bringing it to a boil.
- Combine the prewashed fresh spinach and freshly chopped herbs in the steamer basket. Cover the pan, reduce the heat to medium-low, and steam for 2 to 3 minutes until the spinach is wilted, stirring occasionally. Carefully remove the basket and drain the spinach. Transfer the spinach to a serving bowl, drizzle with a portion of the sherry wine vinegar, and season with salt and pepper to taste.
- Serve the dish accompanied by the remaining sherry wine vinegar for extra flavor. Optionally, garnish with lemon wedges.
