For steamed spinach

2 prewashed fresh spinach
1 cup fresh parsley, chopped (or basil, or cilantro, or watercress)
ΒΌ cup sherry wine vinegar (or your favorite)
salt
pepper
lemon wedge (optional)

Instructions

  • For steamed spinach

    1. Preheat a large pan with a steamer insert over high heat, adding 1" of water and bringing it to a boil.
    2. Combine the prewashed fresh spinach and freshly chopped herbs in the steamer basket. Cover the pan, reduce the heat to medium-low, and steam for 2 to 3 minutes until the spinach is wilted, stirring occasionally. Carefully remove the basket and drain the spinach. Transfer the spinach to a serving bowl, drizzle with a portion of the sherry wine vinegar, and season with salt and pepper to taste.
    3. Serve the dish accompanied by the remaining sherry wine vinegar for extra flavor. Optionally, garnish with lemon wedges.
    4. This recipe yields 4 servings.
