Ingredients

1 lb broccoli, florets only, steamed until crisp tender
1 tablespoon Dijon mustard
2 tablespoons red wine vinegar
2 tablespoons olive oil
12 small red onion, minced
coarse salt
pepper
1 pint cherry tomatoes, halved (I use the small grape or berry tomatoes)
1 (15 ounce) can chickpeas, drained and rinsed

Instructions

    1. In a large bowl, combine the Dijon mustard with the red wine vinegar and olive oil.
    2. Add the minced red onion and season with salt and pepper.
    3. Mix in the halved cherry tomatoes, drained and rinsed chickpeas, and steamed broccoli florets; toss gently to coat all ingredients.
    4. Serve the salad immediately at room temperature or chilled for a refreshing touch.
