Steaming keeps the squash delicate; the onions bring the flavor. Yellow squash rounds cook just until tender while onions soften in margarine with seasoned pepper and a pinch of sugar, then the two get folded together so the sweet, savory onions season every bite. Six servings in about twenty minutes — a Southern-table side with almost nothing to buy.

Ingredients

1
pound yellow squash, sliced ½ inch thick
1
sweet onion, chopped
2
tablespoons margarine
12
teaspoon seasoned pepper (such as Lawry's)
1
teaspoon sugar

Instructions

1. In a wire steamer basket, combine sliced yellow squash and chopped sweet onion. Place the basket over gently boiling water, cover, and let them steam.
2. Steam for 10-12 minutes, or until the squash is fork-tender. Remove the steamed squash and onion to a large serving dish.
3. Immediately after removing, stir in margarine, seasoned pepper, and sugar. Serve the dish hot.
