A crowd-pleasing, kid-friendly dish that adults love too! This crispy, golden Chicken Schnitzel is simple to make with everyday ingredients and is a habit-forming, delicious meal that brings the comfort of home-cooking to your table.
| 500 | grams chicken breast or tenders |

| 4 | eggs | 
| 2 | tablespoons yogurt | 
| 4 | tablespoons flour | 
| 1 | tablespoon paprika (optional) | 
| 1⁄2 | teaspoon salt | 
| • | pepper, freshly ground | 
| • | olive oil (ghee) for cooking | 
| 1. | Begin with clean cut chicken tenders, or, if starting with a whole breast, cut the breast into halves, butterfly each half in the middle and separate into two pieces. Aim for tenders about 1/2 inch thick, but they can be thinned slightly by pounding. |

| 2. | Blend the eggs, flour, yogurt, paprika, salt, and pepper thoroughly in a dish. | 
| 3. | Next, prep the chicken tenders by immersing them completely in the egg mixture. | 
| 4. | Heat olive oil or ghee in a wide pan over medium-high heat. | 
| 5. | Transfer the chicken into the pan and fry for about 7 minutes on each side until golden brown. Avoid overcooking to prevent dryness. | 
| 6. | Drain any excess oil by resting the cooked chicken tenders on paper towels for a few minutes. Be mindful that they do not darken too quickly - if so, decrease the heat slightly, but don't cool the oil too much. |
