Instructions

1. Begin with clean cut chicken tenders, or, if starting with a whole breast, cut the breast into halves, butterfly each half in the middle and separate into two pieces. Aim for tenders about 1/2 inch thick, but they can be thinned slightly by pounding.
2. Blend the eggs, flour, yogurt, paprika, salt, and pepper thoroughly in a dish.
3. Next, prep the chicken tenders by immersing them completely in the egg mixture.
4. Heat olive oil or ghee in a wide pan over medium-high heat.
5. Transfer the chicken into the pan and fry for about 7 minutes on each side until golden brown. Avoid overcooking to prevent dryness.
6. Drain any excess oil by resting the cooked chicken tenders on paper towels for a few minutes. Be mindful that they do not darken too quickly - if so, decrease the heat slightly, but don't cool the oil too much.
