Instructions

Creating the Rich Bolognese Sauce

1. Start by mincing the onions and zesting the garlic. Now, take a heavy-bottomed pot and melt the butter at a low heat. Add the onions and let them cook slowly. Follow with the finely sliced carrot and celery. Season the vegetables with salt and pepper, and let them cook evenly and gently without getting them browned.
2. Introduce the bay leaves into the mix of buttery vegetables. Continue to cook this mixture slowly for another 1-2 minutes.
3. Up next, add the ground beef and increase the heat on the pan. Break up the meat with a wooden spoon and stir periodically to avoid any elements sticking to the bottom. Don't forget to season well with salt and pepper.
4. Time to bring in the red wine. Pour in half a cup and cook for 2 minutes before you add the canned tomatoes. Bring the sauce to a gentle boil, then reduce the heat to maintain a low simmer. Let this simmer for 1 1/2 hours, stirring occasionally, until you're happy with the mingling of flavors. Feel free to add a squeeze of lemon juice or some freshly chopped thyme if you'd like.
