A delightful and rich traditional Irish coffee recipe from The Dead Rabbit, a renowned Irish pub in New York City.

Ingredients

1 14 ounces Irish whiskey (they recommend Power's Gold Label or Clontarf 1014)
4 ounces hot, but not scalded coffee (about 75°C)
5 teaspoons Rich Demerara syrup (combine two parts demerara sugar to one part water and cook until the sugar dissolves; keep until needed)
1 ounce heavy cream, softly whipped

Instructions

1. Pour Irish whiskey into a tall, heat-tolerant glass, preferably an Irish Coffee glass. If Irish Coffee glasses are not available, any tall glass will suffice. Combine coffee and 5/8 oz. of Demerara syrup separately, then gently stir into the glass with the whiskey.
2. Carefully float softly whipped cream on top and grate a touch of nutmeg over the cream. Serve immediately.
