Two mugs, three ingredients, one very good idea: whole milk warmed gently with star anise until the pod's licorice-spice perfume blooms, then sweetened with a spoonful of dark molasses. The molasses adds a bittersweet, almost caramel depth that white sugar can't. It's a bedtime drink, a rainy-afternoon drink, and the fastest possible introduction to what star anise can do outside a braise.

| 1. | In a saucepan over medium heat, gently heat whole milk, molasses, and whole star anise until the mixture just reaches a simmer, approximately 7 minutes, while continually whisking. If the milk starts to froth and rise, remove from the heat to prevent boiling over. Serve the warm star anise milk in teacups or a mug for a delightful and soothing experience. |
