- In a bowl, cream the butter until smooth, then add the sugar and beat until light and fluffy.
- Add one egg and the egg yolks, one at a time, mixing well after each addition. Stir in the vanilla extract and grated lemon rind.
- In a separate bowl, sift together the cornstarch, flour, baking powder, and salt. Gradually add this dry mixture to the wet ingredients, stirring until well combined.
- Using a small spoon, drop uniform spoonfuls of batter onto a well-buttered baking sheet, allowing space for spreading during baking.
- Bake the cookies at 350 degrees Fahrenheit for about 15 minutes, or until lightly golden. Remove from the oven and let cool.
