3 beef roast, trimmed of excess fat (such as brisket, chuck, sirloin, or bottom round)
1 large onion, diced
1 cup beef broth
4 ounces tomato sauce
¼ cup lime juice
2 garlic cloves, minced
1 teaspoon cumin
1 tablespoon chili powder
1 ½ teaspoons salt
1 teaspoon cilantro
1 jalapeno pepper, seeded and chopped (keep some seeds for extra heat)

Instructions

1. Begin by placing the diced onion in a slow cooker, then add the beef roast on top.
2. In a small bowl, combine the beef broth, tomato sauce, lime juice, minced garlic, cumin, chili powder, salt, and cilantro. Pour this flavorful mixture over the beef roast in the slow cooker.
3. Cook on low for approximately 8 hours until the beef is tender and easily falls apart.
