A flavorful and aromatic dish that captures the essence of Thai cuisine with a perfect balance of sweet, savory, and spicy flavors.

Ingredients

8 bone-in chicken thighs, excess fat trimmed
4 tablespoons soy sauce (dark, if available)
2 tablespoons fish sauce
2 tablespoons lemongrass paste (If paste is unavailable, trim the ends from lemongrass stalks and crush the white part of the roots into paste with a knife or mortar)
3 garlic cloves, peeled and smashed
1 fresh cilantro
3 tablespoons sweet chili sauce
1 tablespoon Sriracha, or to taste
2 tablespoons brown sugar
2 tablespoons honey
2 tablespoons turmeric
2 teaspoons white pepper
1 teaspoon ground coriander
2 teaspoons salt, or to taste

Instructions

    1. Begin by preparing the chicken thighs, ensuring they are trimmed of any excess fat.
    2. In a food processor, combine soy sauce, fish sauce, lemongrass paste, garlic cloves, fresh cilantro, sweet chili sauce, Sriracha, brown sugar, honey, turmeric, white pepper, ground coriander, and salt. Process until smooth and adjust seasoning with salt and Sriracha as needed.
    3. Place the chicken in the marinade, cover, and refrigerate for at least 4 hours or overnight to allow the flavors to infuse.
    4. Prepare the grill for indirect heat cooking to prevent burning. This step is crucial for achieving perfectly grilled chicken.
    5. Before grilling, remove the chicken from the marinade and wipe off any excess. Grill the chicken over indirect heat for approximately 1 hour or until the juices run clear and the internal temperature reaches 165°F.
    6. Serve the Authentic Thai Grilled Chicken with a side of fragrant rice and grilled vegetables.
    7. Enjoy the burst of Thai flavors in this delicious grilled chicken dish!
