Ingredients

1 thinly sliced
2 tablespoons vegetable oil
1 cup quick-cooking barley
3 tablespoons raisins
3 teaspoon kosher salt
2 cups chicken stock
1 cup chopped fresh basil
2 tablespoons chopped chives
1 small lemon, juiced and zested

Instructions

1. In a medium-sized pot, heat the oil over medium-high heat. Add the thinly sliced leeks and sauté until just softened.
2. Stir in the quick-cooking barley and continue sautéing for 2 minutes.
3. Add kosher salt, chicken stock, and raisins.
4. Cover the pot and cook over medium heat until the barley is tender, approximately 12-15 minutes.
5. Let the pilaf stand for 5 minutes to allow the flavors to meld.
6. Stir in the chopped chives, fresh basil, lemon zest, and lemon juice.
