Barley and Leek Pilaf with Raisins and Lemon
A delightful and flavorful dish combining tender barley, sautéed leeks, sweet raisins, and zesty lemon.
Ingredients

2 | tablespoons vegetable oil |
1 | cup quick-cooking barley |
3 | tablespoons raisins |
3 | teaspoon kosher salt |
2 | cups chicken stock |
1 | cup chopped fresh basil |
2 | tablespoons chopped chives |
1 | small lemon, juiced and zested |
Instructions
1. | In a medium-sized pot, heat the oil over medium-high heat. Add the thinly sliced leeks and sauté until just softened. |

3. | Add kosher salt, chicken stock, and raisins. |
