Barley and Leek Pilaf with Raisins and Lemon

1 | cup quick-cooking barley |
3 | tablespoons raisins |
3 | teaspoon kosher salt |
2 | cups chicken stock |
1 | cup chopped fresh basil |
2 | tablespoons chopped chives |
1 | small lemon, juiced and zested |
Instructions

- In a medium-sized pot, heat the oil over medium-high heat. Add the thinly sliced leeks and sauté until just softened.
- Stir in the quick-cooking barley and continue sautéing for 2 minutes.
- Add kosher salt, chicken stock, and raisins.
- Cover the pot and cook over medium heat until the barley is tender, approximately 12-15 minutes.
- Let the pilaf stand for 5 minutes to allow the flavors to meld.
- Stir in the chopped chives, fresh basil, lemon zest, and lemon juice.
- Taste and adjust seasonings as necessary before serving.
