Zesty Whole Grain Meatless Taco Salad

A flavorful and wholesome taco salad made with nutritious whole grains and a zesty mix of vegetables and spices.

3⁄4 | cup Bulgar wheat |

1 1⁄2 | water |
2 | chicken bouillon cubes |
1 | tablespoon olive oil |
1 | red onion, minced |
2 | teaspoons garlic, minced |
1 1⁄2 | teaspoons cumin |
2 | teaspoons chili powder |
1⁄4 | teaspoon cayenne pepper |
1 | red bell pepper, chopped |
1 | (15 ounce) can black beans, rinsed and drained |
1 | large tomatoes, diced (or canned) |
1 | tablespoon lime juice |
Instructions

- Prepare the bulgur wheat by cooking it in water with chicken bouillon cubes according to the package directions.
- In a saute pan, heat olive oil over medium-high heat.
- Add minced red onion and saute for 3-5 minutes until translucent.
- Stir in the garlic, cumin, chili powder, and cayenne pepper, then add the chopped red bell pepper. Saute for an additional 2 minutes.
- Remove the pan from the heat.
- Mix in the rinsed and drained black beans, diced tomatoes, and lime juice.
- Season with salt and pepper to taste.
- Chill the salad before serving for the best flavor.
