Ingredients

34 cup Bulgar wheat
1 12 water
2 chicken bouillon cubes
1 tablespoon olive oil
1 red onion, minced
2 teaspoons garlic, minced
1 12 teaspoons cumin
2 teaspoons chili powder
14 teaspoon cayenne pepper
1 red bell pepper, chopped
1 (15 ounce) can black beans, rinsed and drained
1 large tomatoes, diced (or canned)
1 tablespoon lime juice

Instructions

1. Prepare the bulgur wheat by cooking it in water with chicken bouillon cubes according to the package directions.
2. In a saute pan, heat olive oil over medium-high heat.
3. Add minced red onion and saute for 3-5 minutes until translucent.
4. Stir in the garlic, cumin, chili powder, and cayenne pepper, then add the chopped red bell pepper. Saute for an additional 2 minutes.
5. Remove the pan from the heat.
6. Mix in the rinsed and drained black beans, diced tomatoes, and lime juice.
7. Season with salt and pepper to taste.
8. Chill the salad before serving for the best flavor.
