Preparation
- In a plastic freezer bag, combine lager beer, spicy brown mustard, grated horseradish, dried thyme, garlic granules, smoked chipotle chili pepper, ground nutmeg, coarse black pepper, and bay leaves.
- Using a sharp knife, make several slashes through the fat shell of the bottom round roast.
- Place the roast in the marinade bag, remove excess air, seal tightly, and refrigerate for 12-24 hours.
- On the day of cooking, allow the roast in the marinade bag to come to room temperature.

Grilling
- Preheat the gas grill to 450°F (230°C).
- Remove the roast from the marinade bag and place it on a plate, fat side up. Generously season the fat side with Kosher salt.
- Place the roast on the grill, fat side down. Reduce heat to 350°F (180°C) and sear for 5 minutes. Turn the roast and sear each side for another 5 minutes, keeping the lid closed between turns.
- Lower the fire to 325°F (165°C) and cook for approximately 12 minutes per pound, turning periodically and using a meat thermometer to check for desired level of doneness.
- Once done, remove the roast from the grill, let it rest for 15-25 minutes, then slice thinly and serve. Enjoy the flavors!
