2 all-purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup white sugar
1/2 cup butter, softened
2 large eggs
2 teaspoons vanilla extract
2 ripe bananas, mashed
1 cup fresh blueberries

Instructions

    1. Preheat the oven to 350 degrees F (175 degrees C) and generously grease 3 mini loaf pans.
    2. In a medium bowl, combine 2 cups of all-purpose flour, 1 teaspoon of baking soda, and 1/2 teaspoon of salt.
    3. Using an electric mixer, cream together 1 cup of white sugar and 1/2 cup of softened butter in a large bowl until the mixture is light in color and fluffy.
    4. Add the eggs one at a time, ensuring each is well incorporated. Stir in 2 teaspoons of vanilla extract, then beat in the mashed ripe bananas.
    5. Gradually add the flour mixture to the wet ingredients, mixing until just combined into a thick batter. Gently fold in 1 cup of fresh blueberries until evenly distributed.
    6. Divide the batter evenly among the prepared loaf pans.
    7. Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center comes out clean. Allow the loaves to cool in the pans for 10 minutes, then transfer them to a wire rack to cool completely.
