Caramelized Onion and Cheese Grits

A delicious and savory dish that combines creamy grits with caramelized onions, grated cheese, and crispy bacon.
Ingredients
1/2 | cup grits (do NOT use quick or instant!) |

1 | teaspoon salt |
1 1/2 | water |
2 | tablespoons butter |
1 | caramelized onions |
1 | grated hard cheese of your choice |
1 | egg |
2 | strips of bacon |
Instructions
1. | In a saucepan, bring 1 1/2 cups of water to a boil over medium-high heat. Stir in 1 teaspoon of salt and 1/2 cup of grits. Reduce the heat to medium-low and simmer for 20 minutes, whisking occasionally. Add more water if needed. |

2. | Meanwhile, fry the bacon until crispy, then drain and set aside. In 2 tablespoons of the bacon grease, fry the egg. If there is any remaining bacon grease, add it to the cooked grits for extra flavor. |
3. | Stir in 2 tablespoons of butter, 1/4 cup of caramelized onions, and 1/4 cup of grated hard cheese into the cooked grits. Transfer the mixture to a bowl or plate. Top with the fried egg and serve with the crispy bacon on the side. |
