Caramelized Onion and Cheese Grits

A delicious and savory dish that combines creamy grits with caramelized onions, grated cheese, and crispy bacon.

cup grits (do NOT use quick or instant!)

tablespoons butter

caramelized onions

grated hard cheese of your choice

egg

strips of bacon

Instructions

1. In a saucepan, bring 1 1/2 cups of water to a boil over medium-high heat. Stir in 1 teaspoon of salt and 1/2 cup of grits. Reduce the heat to medium-low and simmer for 20 minutes, whisking occasionally. Add more water if needed.
2. Meanwhile, fry the bacon until crispy, then drain and set aside. In 2 tablespoons of the bacon grease, fry the egg. If there is any remaining bacon grease, add it to the cooked grits for extra flavor.
3. Stir in 2 tablespoons of butter, 1/4 cup of caramelized onions, and 1/4 cup of grated hard cheese into the cooked grits. Transfer the mixture to a bowl or plate. Top with the fried egg and serve with the crispy bacon on the side.
