Sautéed Lettuce with Smoked Bacon

Ingredients
1 | romaine or iceberg lettuce, cored and sliced into 1-2" pieces |

4 | ounces smoked bacon, coarse chopped, or julienned smoked tofu |
½ | teaspoon mild vinegar, such as rice, white wine, or sherry |
1 | pinch sugar |
1 | teaspoon chili bean sauce or paste (toban djan), optional |
vegetable oil, if using tofu |
Instructions
1. | Prepare the lettuce by coring and slicing it into 1-2" pieces. Avoid chopping it too small to maintain some texture. Set aside. |

2. | Heat a skillet or wok over medium-high heat. Cook the bacon until crispy, rendering the fat. If using smoked tofu, add oil to the pan and cook the tofu for about 1 minute. |
3. | Add the prepared lettuce to the skillet and gently stir until it just starts to wilt. Incorporate vinegar, sugar, and chili bean sauce, if desired. Adjust seasoning with salt, more vinegar, or sugar to taste. |
4. | Transfer the cooked mixture to a serving dish and sprinkle with pepper. Serve hot alongside cooked rice. |
