2 cups uncooked whole wheat spiral pasta
1 head cauliflower, broken into florets
1 head broccoli, broken into florets

Instructions

1. Begin by heating the olive oil in a saucepan over medium heat.
2. Add the minced onion, garlic, and chopped red bell pepper. Sauté for 3 to 5 minutes until aromatic.
3. Introduce the fresh parsley, Dijon mustard, balsamic vinegar, pinch of salt, and a quarter teaspoon of pepper. Allow the mixture to cook for 3 minutes or until thoroughly heated, then cover and set aside.
4. In a pot of boiling water, cook the whole wheat spiral pasta for 5 minutes. Add the cauliflower and broccoli florets, continuing to cook for an additional 3 minutes or until the vegetables and pasta are tender. Drain the mixture well.
