Mediterranean Style Oven-Baked Sea Bream with Potatoes is a dish that is a feast for the senses. The meaty sea bream is stuffed with zesty lemon and fragrant garlic, rosemary, and sits on a bed of thinly sliced potatoes. The potatoes also soak up the flavors from the fish as it bakes, making this recipe a winner in every bite. Serve hot with a sprinkle of fresh parsley and additional slices of fresh lemon for a vibrant.

Ingredients

pound sea bream, gut and scales removed

tablespoon fresh parsley, chopped

Instructions

1. Begin by preheating your oven to 430°F (220°C).
2. Give the potatoes a good wash, then peel and thinly slice them to about 1/4 inch in thickness.(You can also add other vegetables of your choice : carrots, tomatoes, zucchini)
3. Toss the potato slices in minimal olive oil. They should be lightly coated, not drenched. Arrange these in an ovenproof dish, keeping in mind that the fish will be placed on them later. Add taste with salt and pepper. (You can also add other vegetables of your choice : carrots, tomatoes, zucchini)
4. Cover the dish with aluminium foil and bake the potatoes in the oven for 15 minutes.
5. While the potatoes are baking, attend to the fish. Ensure it is clean and pat dry. Trim away the pectoral and ventral fins.
6. Apply a bit of salt to the inside of the fish's cavity, then stuff it with two lemon slices, a few slices of garlic, and one sprig of rosemary. Brush some olive oil onto both sides of the fish.
7. After the potatoes have been baking for 15 minutes, remove them from the oven and sprinkle sliced green onions and the remaining garlic over them.
8. Now, place the prepared fish on top of the potatoes. Add a bit more salt, then put the dish back in the oven to bake for another 25 to 30 minutes or until the fish is done. One way to test whether the fish is ready is if the dorsal fin comes off easily.
9. If the fish starts drying out while baking, brush a bit more olive oil onto it.
10. Once the fish is cooked, take the dish out of the oven and sprinkle chopped fresh parsley over the top. Serve hot, accompanied by additional lemon slices for those who want an extra zesty punch.
11. NOTE: You can either serve the fish whole or fillet it before serving.
