Cheddar-Crusted Fish Katsu

Four ingredients, one clever move: crushed cheddar crackers stand in for panko, so the katsu crust comes out of the pan toasted and cheesy at the same time. The fish fillets get dipped in egg, pressed into the cracker crumbs and fried in avocado oil. Four servings, no breadcrumbs required.

Annie's organic cheddar squares, crushed

Instructions

1. Pulverize the Annie's organic cheddar squares in a food processor until they form fine bread crumbs.
2. In a small bowl, whisk the egg and season both sides of the salmon fillets with salt. Dip the fish fillets in the beaten egg, then coat them in the cheddar squares crumbs.
3. Heat a large nonstick skillet over medium heat. Place the coated fish fillets in the skillet and cook for approximately 5 minutes on each side until the cheddar coating is golden brown and the salmon is cooked through.
