Cheese-Topped Cauliflower Quiche

Instructions
1. | Preparing the Crust: Begin by quartering the head of cauliflower and arranging it on a parchment-covered baking tray. Drizzle generously with Extra Virgin Olive Oil (EVOO) and sprinkle with a blend of 5-spice powder and coriander. Roast in the oven at 450F for 30 minutes until the cauliflower turns a toasty brown color. |

2. | Preparing the Filling: In a pan, lightly caramelize the diced onions in EVOO. Add the diced red bell pepper and heat until tender, then incorporate the chopped broccoli. Stir the mixture over medium heat for 10-15 minutes, season with freshly ground pepper, and set aside to cool slightly. |
