A delicious and flavorful quiche made with a cauliflower crust and filled with a creamy mixture of vegetables, cheese, and bacon.

Ingredients

1 quartered
12 cup shredded parmesan cheese
12 cup shredded mozzarella cheese
1 egg
2 tablespoons 5-spice powder
2 tablespoons coriander
6 eggs
12 cup heavy cream
1 medium sweet onion, diced
1 red bell pepper, diced
1 small head broccoli, chopped
12 cup shredded cheddar cheese
12 cup shredded parmesan cheese
10 slices chicken bacon, chopped
12 tablespoon fresh ground pepper

Instructions

1. Preparing the Crust: Begin by quartering the head of cauliflower and arranging it on a parchment-covered baking tray. Drizzle generously with Extra Virgin Olive Oil (EVOO) and sprinkle with a blend of 5-spice powder and coriander. Roast in the oven at 450F for 30 minutes until the cauliflower turns a toasty brown color.
2. Preparing the Filling: In a pan, lightly caramelize the diced onions in EVOO. Add the diced red bell pepper and heat until tender, then incorporate the chopped broccoli. Stir the mixture over medium heat for 10-15 minutes, season with freshly ground pepper, and set aside to cool slightly.
3. Completing the Crust: Once the roasted cauliflower has cooled slightly, transfer it to a food processor and process until finely ground. Add shredded parmesan and mozzarella cheese, along with an egg. Process until the mixture is smooth, resembling a thick mashed potato consistency.
4. Forming the Crust: Press the cauliflower mixture into a baking dish that has been coated with oil. Create a crust ridge around the edges and press the mixture flat using your hands. Bake in a preheated oven at 400F for 20 minutes until the crust turns golden brown. Remove from the oven and reduce the temperature to 350F.
5. Preparing the Filling Mixture: Whisk together the eggs and heavy cream in a bowl, then fold in the shredded cheddar and parmesan cheeses. Add the cooled vegetable mixture and the chopped chicken bacon, mixing everything well.
6. Assembling and Baking: Once the crust has cooled to a warm temperature, evenly spread the egg and vegetable mixture over the crust. Bake in the oven at 350F for 30 minutes or until the quiche is completely set and firm.
