Cheesy Cauliflower Delight

Ingredients

1⁄4 | cup all-purpose flour |
1.67 | cups milk |
3 1⁄2 | ounces grated sharp Cheddar cheese |

Instructions
1. | Begin by preparing the cauliflower: place a steamer insert into a saucepan and fill with water just below the bottom of the steamer. Bring the water to a boil. Add the cauliflower, cover the saucepan with a fitting lid, and steam until the cauliflower is tender, approximately 10 to 12 minutes. |

2. | In a large pot over medium heat, melt the butter. Whisk the flour into the melted butter and cook, stirring constantly until the raw flour taste cooks off and the mixture darkens, which should take about 3 to 4 minutes. |
3. | Gradually whisk in the milk into the butter-flour mixture. Allow the sauce to cook, stirring constantly, until it thickens, for about 8 minutes. Remove the pot from the heat and stir in the grated sharp Cheddar cheese. Season the sauce generously with salt and white pepper. |
