A hearty and flavorful chili pie made with roasted chicken, bell peppers, and savory spices, served over a bed of crunchy Beanitos chips and topped with cheese, lettuce, onions, and avocado.

Instructions

    1. In a large pan, sauté diced green bell pepper, onion and minced garlic in olive oil over medium heat until onions become translucent, about 5 minutes.
    2. Add in canned crushed tomatoes, pinto beans, chili powder, taco seasoning, and season with salt and pepper. Let the mixture simmer for 25 - 30 minutes.
    3. Stir in the leftover roasted chicken, shredded, during the last 5 minutes to warm through.
    4. Remove the chili from the stove and serve over a bed of Beanitos White Bean chips. Top with shredded cheese, lettuce, onions, and sliced avocado.
