Chilled Soba Noodle Salad
Prepare a week's worth of this delightful chilled soba noodle salad, featuring a flavorful mix of noodles, edamame, and assorted vegetables tossed in a tantalizing Thai peanut sauce.
Ingredients

5 | (3-cup) storage containers |
1 | cup shelled edamame |
1 | large carrot, shredded |
4 | green onions, thinly sliced |
½ | cup chopped cilantro |
1 ¼ | cups Thai peanut sauce |
5 | (2-ounce) dressing containers |
Instructions
1. | Begin by filling a large pot with lightly salted water and bringing it to a rolling boil. Add the soba noodles and return to a boil. Cook uncovered, stirring occasionally, until the noodles are tender yet firm to the bite, approximately 7 minutes. Drain the noodles. |

2. | In a medium bowl, toss the cooked noodles with toasted sesame oil. Divide the noodles evenly among 5 separate containers. |
3. | Top the noodles in each container with shelled edamame, shredded carrot, sliced green onions, and chopped cilantro, dividing these ingredients evenly among the 5 portions. Cover the containers with lids. Pour 1/4 cup of Thai peanut sauce into each of the dressing containers. Refrigerate the containers until ready to enjoy. When serving, mix one dressing container with one portion of the soba salad. |
