Ingredients

For the Potato Cups

Nonstick cooking spray
½ (32 ounce) package frozen fried potato nuggets (such as Tater Tots®)

For the Filling

½ (16 ounce) package Farmland® Cubed Ham
1 ½ cups shredded Monterey Jack cheese
sliced green onions or chopped fresh chives

Instructions

  • For the Potato Cups

    1. Preheat the oven to 425°F (220°C).
    2. Coat 12 (2 1/2-inch) muffin tins with nonstick cooking spray.
    3. Place 4 potato nuggets in each muffin tin and bake for 12 minutes.
    4. Remove from the oven and use the bottom of a 1/4-cup measure to press the potatoes into the bottom and partway up the sides.
    5. Return to the oven and bake for an additional 12 minutes.
  • Assembling the Cups

    1. Divide the cubed ham among the potato cups and bake for 10 more minutes or until the cups are crisp, brown, and the ham is heated through.
    2. Divide the shredded Monterey Jack cheese among the cups and bake for 5 more minutes or until the cheese is melted and edges are golden.
    3. Remove from the tins and garnish with sliced green onions or chopped fresh chives.
