Ingredients

2 ½ cups cooked lentils
1 small onion, diced
1 egg, beaten
¼ cup diced bell pepper
cup Italian-seasoned bread crumbs
cup shredded mozzarella cheese
1 teaspoon olive oil-packed minced garlic
1 pinch salt
1 pinch ground black pepper
¼ cup cornmeal, or as needed
1 tablespoon olive oil

Instructions

    1. In a food processor, pulse the lentils until coarsely ground. Transfer the ground lentils to a large mixing bowl.
    2. Combine the diced onion, beaten egg, diced bell pepper, and Italian-seasoned bread crumbs with the lentils mixture. Add shredded mozzarella cheese, olive oil-packed minced garlic, a pinch of salt, and a pinch of ground black pepper to the lentil mixture and mix thoroughly.
    3. Divide the mixture into four equal portions, shaping them into balls and gently flattening them into patties.
    4. Spread cornmeal onto a wide, shallow bowl. Gently coat each patty with cornmeal.
    5. In a wide skillet, heat olive oil over medium-high heat. Cook the patties in the skillet until golden brown, approximately 5 minutes per side.
