1 | egg, beaten |
¼ | cup diced bell pepper |
⅛ | cup Italian-seasoned bread crumbs |
⅓ | cup shredded mozzarella cheese |
1 | teaspoon olive oil-packed minced garlic |
1 | pinch salt |
1 | pinch ground black pepper |
¼ | cup cornmeal, or as needed |
1 | tablespoon olive oil |
Instructions
1. | In a food processor, pulse the lentils until coarsely ground. Transfer the ground lentils to a large mixing bowl. |

2. | Combine the diced onion, beaten egg, diced bell pepper, and Italian-seasoned bread crumbs with the lentils mixture. Add shredded mozzarella cheese, olive oil-packed minced garlic, a pinch of salt, and a pinch of ground black pepper to the lentil mixture and mix thoroughly. |
3. | Divide the mixture into four equal portions, shaping them into balls and gently flattening them into patties. |
4. | Spread cornmeal onto a wide, shallow bowl. Gently coat each patty with cornmeal. |
5. | In a wide skillet, heat olive oil over medium-high heat. Cook the patties in the skillet until golden brown, approximately 5 minutes per side. |
