2 medium firm tomatoes (about ¾ pound)
2 teaspoons all-purpose flour
1 teaspoon cinnamon
12 teaspoon ground cumin
1 pinch kosher salt, plus extra for serving
1 tablespoon olive oil (more or less)

Instructions

    1. Begin by halving the tomatoes and delicately removing and discarding the seeds. Note: this step can be skipped when using Roma or plum tomatoes. Proceed to slice the tomatoes into thick pieces.
    2. Combine the flour, cinnamon, cumin, and a pinch of kosher salt on a plate. Gently coat each tomato slice in this seasoned mixture, ensuring that both sides are evenly covered.
    3. Preheat a sturdy skillet over medium heat for a few minutes. Once the skillet is adequately hot, add the olive oil, allow it to heat for approximately 10 seconds, then swirl to coat the pan.
    4. Carefully fry the seasoned tomato slices in the hot oil until they achieve a crispy texture, approximately one to two minutes per side. Exercise caution to prevent burning.
    5. Transfer the fried tomato slices to a plate and let them rest for 3-5 minutes before serving, as the interior juices may be very hot. Serve with additional kosher salt on the table and savor the delightful flavors!
