Citrus Marinated Skirt Steak

A delicious and flavorful marinated skirt steak with citrus and spices, perfect for grilling or pan-searing.

8 | garlic cloves, roughly chopped |
1⁄2 | large white onion, roughly chopped |
1 | Juice and zest of one small lime |
1 | Jalapeno |
2 | tablespoons soy sauce |
1 1⁄2 | tablespoons Fiesta blend |
2 | teaspoons chili powder |
1⁄2 | teaspoon paprika |
2 | teaspoons ground cumin |
1⁄4 | teaspoon black pepper |
kosher salt |
Instructions
1. | In a container, combine all the ingredients except for the skirt steak. Mix the ingredients thoroughly, preferably using a plastic food storage bag. |

2. | Place the skirt steak in the marinade, ensuring that both sides are evenly coated. |
3. | Cover the container or seal the plastic food storage bag, then refrigerate the meat. |
4. | Allow the meat to marinate for a minimum of 24 hours. |
5. | Before cooking, take the marinated meat out of the refrigerator and let it come to room temperature for about 15 minutes to ensure even cooking. |
6. | Cook the skirt steak to your preferred doneness, either on the grill or stove top. For a medium rare finish, cook the steak on medium-high heat in an oiled pan for 4 minutes on each side. |
7. | Prior to cooking, season each skirt steak with a sprinkle of kosher salt and black pepper. After cooking, let the meat rest for at least ten minutes before slicing to retain the juices and enhance the overall juiciness of the meat. |
