- Begin by combining in a large bowl the ground beef, ground pork, breadcrumbs, finely chopped onion, egg, Worcestershire sauce, minced garlic, dried tarragon, salt, and pepper. Thoroughly mix all the ingredients together to ensure a consistent blend. Divide the mixture into two loaves, each measuring around 4x7 inches, and place them on a baking sheet.
- In a separate small bowl, mix together the ketchup and barbecue sauce. Spread 3 tablespoons of the sauce mixture evenly over the top of each meatloaf, reserving the remaining sauce for later use.
- Ensure that the grill is clean and preheat it for indirect cooking over medium to medium-low heat, approximately 300°F. Carefully transfer the meatloaves onto the grill where there is indirect heat to avoid any flare-ups. Grill the meatloaves until the internal temperature reaches 160°F, which should take about 50-60 minutes. Allow them to rest on the grill for 10-15 minutes before applying the remaining sauce evenly on both loaves. Once done, remove the loaves from the grill and slice them into 1/2-inch thick pieces.
- For delicious meatloaf sandwiches, cut the meatloaf into 1/2-inch slices and generously coat both sides with the reserved barbecued sauce. Grill the slices over medium-low heat for 4-6 minutes, flipping once, until the internal temperature ranges between 250-300°F. Serve the meatloaf slices on sourdough bread with provolone cheese and additional sauce as desired.
