This classic beef stroganoff uses quickly seared strips of beef, browned mushrooms, onion, and a tangy sour cream sauce. Serve it over egg noodles for the familiar creamy, savory dish without canned soup or ground beef shortcuts.

| 1. | Bring a large pot of salted water to a boil for the egg noodles. |

| 3. | Heat 1 tablespoon oil in a large skillet over medium-high heat until shimmering. |
| 4. | Sear half of the beef in a single layer for 45 to 60 seconds per side, then transfer it to a plate. |
| 5. | Repeat with the remaining 1 tablespoon oil and the remaining beef. |
| 6. | Reduce the heat to medium and melt 2 tablespoons butter in the same skillet. |
