Classic Filipino Pork Adobo

Instructions
For marinating and cooking the pork | |

1. | Marinate the pork cubes in a mixture of vinegar, soy sauce, salt, minced garlic, bay leaf, and pepper for at least 30 minutes. |
2. | Simmer the marinated pork covered for one hour until the meat is tender. Drain the pork and reserve the flavorful sauce. |
3. | Heat cooking oil in a skillet. Brown the pork cubes on all sides until golden. Transfer the browned pork to a serving dish. |
4. | Discard excess oil from the skillet. Add the reserved sauce and cook for a minute or two, deglazing and scraping off any brown bits. Remove the bay leaf. Pour the sauce over the pork and serve hot. |
