Preparing the Panna Cotta
- In a medium saucepan, sprinkle the contents of the gelatin packet over the half-and-half and let it stand for 5 minutes.
- Over low heat, stir the gelatin mixture until it is completely dissolved.
- Add the heavy cream.
- Add half of the vanilla extract and sugar.
- Continuously stir over low heat until the sugar is fully dissolved.
- Taste the mixture and add the remaining vanilla extract if desired.

Setting and Serving
- Lightly coat the insides of 4-1/2 cup ramekins with canola oil.
- Carefully ladle the cream mixture into the ramekins and allow it to cool.
- Place the ramekins in the fridge and let the panna cotta set for at least 4 hours.
- Serve the panna cotta in the ramekins or unmold for a stylish presentation.
- Garnish with fresh fruit before serving.
